Ingredients:
- 8 slices bacon, divided
- 1 Medium onion finely diced
- 1 Red Bell Pepper (diced)
- 1 Green Bell Pepper (diced)
- 4 cups of frozen corn kernels (thawed)
- 1 TB sugar
- 1 tsp Garlic powder
- 1 tsp Onion powder
- salt and pepper to taste
Instructions:
Heat up a large pan and cook bacon until crisp. Dry off excess grease with paper towels. Move bacon to a cutting board and give it a rough chop.
Pour out all but a small amount of the bacon grease and add onions and bell peppers to pan. Cook on medium low until veggies get soft, yet nicely charred.
Turn pan to medium high and add corn. Season with garlic and onion powder along with sugar. Mix well. Allow corn to set without stirring for at least 5 minutes or so. The sugar helps to add caramelization, letting the beautiful charred color to form.
Stir and turn down to medium low and let the corn finish heating up. After another 5 minutes turn off heat, add 3/4 of the chopped bacon and stir.
Top each serving with a little extra bacon
